What hydrolysis does

Collagen in its intact form is a long molecule: three chains wound around one another in a triple helix, the arrangement that makes it the body's most abundant structural material. Whole, it is large and largely insoluble. Stirred into a glass of water it would sit there.

Hydrolysis is the step that changes that. Water and enzymes cut the long chains at points along their length, and what emerges is a set of much shorter fragments called peptides. The result dissolves readily, and it carries no flavor of its own.
